I'm craving Mexican food these days. Enchiladas, burritos, refried beans, salsa, tacos, tamales. You name it, I want it. Sounds yummy to my swelling tummy! The problem is that there is no good place except my own kitchen to find these items (except maybe the quac). The only place even remotely close that I'll actually go in to is Taco Bell, which does satisfy my taco and burrito needs. But for enchiladas, I have to make them at home. Which is not hard, but relatively time consuming, and I don't ever feel much like cooking a whole lot in the summer, as the kitchen is the warmest place in my apt.
So you Texans out there eat some good ol' Mexican food for me sometime this week. And think of my poor child who has to get by with Taco Bell. ~Sigh~

I don't think I could live in NYC, for the mere reason there's no good Mexican food.

Sorry Pigs. We had cajun food last night at a new-to-us place by the History Museum, and it did a little to satisfy my ethnic food (if you can call cajun food ethnic....Wes/Roxi, what do y'all think?), but I'd still love a puff taco with double beans and a frozen marg. from Ojeda's.
Oh, yum... Would it help if the recipe were super easy but only Mexican-ish? I'll dig out the cookbook.
Katie makes the best enchiladas in NY, but it is a bit of an undertaking so not good for mid week.
Chuy's Hatch Chili festival kicks off next week. MMM, Hatch Green Chili's. Given the new regs, I don't know that we could carry on a take out order for you...Bummer.
You would seriously think that the city with the most and some of the best restraunts in the world would have some decent Mexican. Guess the illegals haven't made it up there in force yet.
Yes, C-Shock, you'd think. But sadly, no. We went to one place back when we first moved here and I literally ate two bites and wouldn't touch anymore. Most of the illegals up here are from the Islands....Dominican, Cuban, Puerto Rican (but can you be illegal if you are PR?), and various other Spanish-speaking nations. GREAT Cuban food, but it's all rice and black beans. They shun refried up here. Even at the chi-chi Mexican place we go to occasionally ($$$), it's black beans.
